Roasted Tomatoes
- 4 small chicken breasts
- 1 Tbsp. garlic-infused olive oil
- 1 tsp. dried oregano
- 16 cherry tomatoes, halved
- 1 Tbsp. garlic-infused olive oil
- Grilled Chicken
Pasta
- 8 oz. uncooked gluten-free pasta (like rotini or penne)
Pesto
- 2 (0.75 oz.) packages fresh basil
- ¼ cup chives
- ¼ cup pine nuts
- ½ lemon, juice of
- ¼ cup garlic-infused olive oil
- Salt and pepper, to taste
INSTRUCTIONS
- Preheat oven to 350°F. Toss cherry tomato halves with olive oil and spread evenly onto a shallow baking pan. Roast until skins are wrinkled and slightly caramelized; about 30 minutes. Set aside.
- Preheat tabletop grill. Place chicken breasts, olive oil, and oregano in a large bowl and toss to mix. Grill chicken until done. Allow to cool slightly before slicing. Set aside.
