INGREDIENTS
Roasted Tomatoes

  • 4 small chicken breasts
  • 1 Tbsp. garlic-infused olive oil
  • 1 tsp. dried oregano
  • 16 cherry tomatoes, halved
  • 1 Tbsp. garlic-infused olive oil
  • Grilled Chicken

Pasta

  • 8 oz. uncooked gluten-free pasta (like rotini or penne)

Pesto

  • 2 (0.75 oz.) packages fresh basil
  • ¼ cup chives
  • ¼ cup pine nuts
  • ½ lemon, juice of
  • ¼ cup garlic-infused olive oil
  • Salt and pepper, to taste

INSTRUCTIONS

  1. Preheat oven to 350°F. Toss cherry tomato halves with olive oil and spread evenly onto a shallow baking pan. Roast until skins are wrinkled and slightly caramelized; about 30 minutes. Set aside.
  2. Preheat tabletop grill. Place chicken breasts, olive oil, and oregano in a large bowl and toss to mix. Grill chicken until done. Allow to cool slightly before slicing. Set aside.
