- 2 chicken thighs, bone in, skin on
- 1 tbsp coconut flour
- 1 tbsp almond flour
- 1 tbsp shredded coconut, unsweetened
- 1/4 tsp salt
- 1 -2 tsp chili powder (depending on how spicy you like it)

- Air Fryer MethodCombine dry ingredients in a large bowl.
- Toss chicken thighs in dry mixture and cover completely
- Place in air fryer at 360 for 20 minutes.
Oven Method
- Preheat oven to 375 degrees F. Line a large baking sheet with copper mat or parchment paper
- Combine dry ingredients in a large bowl.
- Toss chicken thighs in dry mixture and cover completely with mixture
- Place in oven and cook for 30-35 minutes or until chicken juices run clear (internal temperature of 165 degrees F).
