Keto/Low Carb Simply Delicious "Fried" Chicken

Ingredients

  • 2 chicken thighs, bone in, skin on
  • 1 tbsp coconut flour
  • 1 tbsp almond flour
  • 1 tbsp shredded coconut, unsweetened
  • 1/4 tsp salt
  • 1 -2 tsp chili powder (depending on how spicy you like it)

Instructions

  • Air Fryer MethodCombine dry ingredients in a large bowl.
  • Toss chicken thighs in dry mixture and cover completely
  • Place in air fryer at 360 for 20 minutes.

Oven Method

  1. Preheat oven to 375 degrees F.  Line a large baking sheet with copper mat or parchment paper
  2. Combine dry ingredients in a large bowl.
  3. Toss chicken thighs in dry mixture and cover completely with mixture
  4. Place in oven and cook for 30-35 minutes or until chicken juices run clear (internal temperature of 165 degrees F).
