Keto Vegetable Beef Stew
INGREDIENTS
INSTRUCTIONS
- ¼ tsp dried basil
- ¼ tsp thyme
- ½ tsp ground black pepper
- 1 tbsp parsley
- 3 lbs beef (beef stew meat)
- ¼ cup olive oil
- ½ yellow onion (about 140g)
- 3 cloves of garlic
- 8 oz white mushrooms
- 200g celery (about 2-3 stalks)
- 1 head of cauliflower (about 750g)
- 1 can basil, garlic, oregano, diced tomatoes
- 4 cups beef broth
- 2 cups original V8 vegetable juice
- 5 cups water
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 ½ tbsp pink salt
INSTRUCTIONS
- Prep all of your veggies: Dice the onion, mince the garlic, and chop the cauliflower, mushrooms, and celery into about 1 inch pieces.
- Place a large stock pot on a burner and turn to high heat. Add the olive oil, onions, and garlic. Sautee until they are slightly translucent and softer. Add the beef pieces and cook slightly until they are lightly cooked (about 10 minutes). Add the rest of the ingredients and let cook on medium high heat for 30 minutes, stirring occasionally.
